I know you expecting me to talk about pumpkin this month but I sort of am. Pumpkin afterall is just a type of squash. Having a CSA Farm Share I get an abundance of squash (pumpkin included) and other root vegetables this time of year.
My favorite dish is to just chopping all the veggies up, add some onion, herbs (thyme, rosemary, sage, oregano whatever is on hand), salt, pepper, and olive oil and bake them at 400 degrees for about 20-40 minutes. I do huge batch all at once and it will last most of the week. Throw a fried egg on top for breakfast or serve as a side dish with a rotisserie chicken for easy dinner or if you're feeling lazy just eat them as is. Healthy and really delicious.
